Recipe Ideas and Links

I had asked the great members of the RDH email community if they had any quick and easy recipes for meals. Here are the responses as well as some links to find some recipes.

A crock pot would be great...I always do... Put a flank steak in crock pot...mix together a can of cream of mushroom soup and a can of french onion and pour over the meat...cook all day...serve over noodles. My kids love it. Add a salad and veggie and it is plenty.

What I made for dinner last night took 10 minutes, literally,. Butterball Chicken Request frozen baked chicken breast...5 min in the microwave Instant mashed potatoes can of green beans...3 minutes in the microwave and Viola!!! There was dinner. Hope this helps!

Here is a wonderful, easy and low fat recipe for beef stroganoff. I double it and freeze half. You can make the sauce ahead of time and all they have to do is reheat it and boil the egg noodles.


Brown the hamburger with chopped onion and spices in a deep skillet. No need to drain.
Boil water, bouillon, and mushrooms until bouillon is dissolved. Pour into skillet with meat. Boil until liquid is reduced to half. Mix flour into sour cream. Add sour cream to meat mixture and heat until thickened. Serve with egg noodles.

Do you have a crock pot? I use mine every now and then. Usually there are recipes in the book that comes with it. I make a great vegetable beef soup in mine. How old are your kids? My son used to like to make simple things, and now he is entering culinary school to become a chef! It all started with macaroni and cheese! (We make ours from scratch, none of this kraft stuff-if you want the recipe I will be happy to send) My kids just used to like simple things too, like grilled cheese sandwiches and canned tomato soup! I get a lot of those already cooked chickens in the grocery too, (the rotisserie kind) and heat them up in the oven. Those bags of salad come in very handy too! I also make a southernbarbecue style brisket-easiest way is to dump a bottle of your favorite barbecue sauce over the brisket, cover it and cook it in a slow oven about 300 degrees for several hours until it falls apart. We like it on hamburger buns with cole slaw and baked beans or corn, or else over rice. Its easy for you to prepare ahead, and easy for your husband or kids to heat up! If you make a lot, you can also freeze it it. Good luck.

I often make crock pot chicken and dumplings....very easy..and delicious the next day. Or, homemade pizzas (you could do the night before ) and they could pop in the oven, or soup and breadsticks are a favorite at my house...let me know if these interest you at all...

Hi! I know what you mean! Try this:
Hot Ham & Cheese


In bowl combine butter mustard onion & poppy seeds. Spread over cut sides of buns. Layer ham & cheese on bottom 1/2 replace tops. Wrap each sandwich in foil place on a baking sheet. Bake at 350 for 20 -10 min or until cheese has melted.
* As a substitute for horseradish mustard combine 1 tbs. spicy brown mustard w/ 1 tbs. prepared horseradish.
Seasoned Potato wedges

Cut the potatoes in half lengthwise, cut each half lengthwise into 3 wedges. place in a single layer on a greased baking sheet. Spread mayo (lightly!) over cut sides of potatoes then sprinkle w/ seasoned salt. Bake 350 for 50-60 min or until tender.
This is a great recipe for nights when you really don't want to do a whole lot. I make the potatoes first and while cooking I make the sandwiches. I stick the sandwiches in with the potatoes at the last 10 min of cooking. Clean up is a snap! I add a fresh salad to the side. Happy cooking!

Artichoke Pasta

Ingredients: 

Directions: 

  1. Cook linguini in a large pot of boiling salted water until tender. 
  2. Meanwhile, sauté mushrooms and onion in butter or margarine with thyme. Remove from heat. Stir in flour. Then stir in chicken broth and half and half. Return to heat, and stir until the sauce boils and thickens. Strain artichokes, and stir the liquid into the sauce. Add the fresh Parmesan. 
  3. Drain linguini, and toss with sauce. Fold in the strained artichokes. Serve immediately. 

Makes 4 servings.
This is a great recipe. Evaporated skim milk can be substituted for the half & half to decrease the fat and calorie content. Bon Appetit!
